The balloons go up at first light because that is when the valley air is still. It means a start that feels unreasonable at the time and correct afterwards. Build the rest of the day downward from it — a cellar is a good place to be at noon, and a picnic between vineyards asks nothing of you. Do not book three tastings in a day; two is plenty and the second one is where the conversation happens.

For the balloon, yes — they fly at dawn because the air is calm then, and flights get scrubbed for wind later in the day.
